Because it's ground the same morning you buy it. Mince greys as it oxidises in a sealed tray over days — ours hasn't had the time. What you're seeing is what fresh actually looks like.
Honestly, by cut: mince and sausages are at their best inside 3 months; diced beef and steaks hold 4 to 6; a blade roast or corned girello, wrapped well, goes 6 to 8. Everything's wrapped in paper then bagged, dated in grease pencil.
At the counter, always — tell us what your crew won't eat and we'll trade around it. Packs ordered online stay fixed so the price stays honest; add extras with the builder instead.
Yes — quoted by the kilo on the day's carcase. The market sets it, we pass it through, and we'll break it to your cut sheet: your mince-to-steak ratio, your roast sizes, your sausage flavours.
Same day before 4pm if it's in by 11am — we break down through the morning, wrap after lunch. Saturday orders are best placed Friday; the counter queue gets first go at the cabinet.
