What size grease arrestor do I actually need?
The way the plumbers do it: your covers a day multiplied by the litres each cover sends down the sink, then the arrestor is sized to hold the peak two-hour discharge — two fifths of the day’s flow. A 280-cover a la carte restaurant works out at 5,600 litres a day, 2,240 litres of required capacity, and the smallest catalogue tank above that is the 3,000 L. The Water Corporation’s permit officer sets the size that goes on your permit. We size it the way they do and we do the application with you — but their number is the one that binds.
How often does it get pumped out, and what does a year cost?
When the grease and settled solids together reach a quarter of the wet depth. For that same 280-cover restaurant on a 3,000 L that is about every 14 weeks — four visits a year, roughly $2,320. The honest upper end matters more: a charcoal, fry and wok kitchen doing 280 covers seven days a week on a 3,000 L hits the quarter-full line in six weeks, and the dearest running year the calculator above can produce is a 960-cover charcoal kitchen on a 10,000 L — nine pump-outs, $11,610 a year. Nobody quotes the running cost. It is usually the bigger number.
Do I need a Water Corporation permit?
If you discharge trade waste to sewer in Perth, yes — an industrial waste permit from the Water Corporation, and it is the permit that sets your pre-treatment, your sampling requirement and your service interval. We fill the application in with you for $390, draw the sketch it asks for, and answer the officer when they come back with questions. We cannot promise you an outcome and we will not pretend to.
My sewer connection is shallow. Does that change anything?
It changes everything. An arrestor works on gravity: the outlet has to sit above your sewer junction or nothing leaves the tank. Bigger tanks are deeper and their outlets sit lower — a 10,000 L outlet is 800 mm down, a 1,000 L is 350 mm. If the tank your kitchen needs cannot reach your sewer, the answer is a pump station and a variation to your permit, and that is not a number we would guess at from a web page. Move the sewer chip above to 450 mm and watch the drawing refuse the job.
Can it go inside, or does it have to be in the ground?
Above-ground units go inside a tenancy where there is no yard to dig — a strip shop, an upper-floor kitchen, a heritage frontage. They top out at 2,000 L in our range, they need floor space and a real access route for the hose, and the sewer invert stops mattering because the unit sits on your floor and drains to a floor waste. Above 2,000 L of required capacity, inside is not an option and the drawing will tell you so.
What if it turns out I do not need one?
Then we say so and you keep your money. A coffee and pre-packaged menu does not put fats or oils down the sink in any quantity a permit officer cares about — a basket strainer in the sink and a conversation with the Water Corporation is the whole job. Try the first kitchen chip above: the page refuses to quote it, deliberately. We would rather tell you now than sell you a tank.
